Flour Fortification

Wheat is an important cereal crop and together with maize and rice account for 94% of total cereal consumption worldwide. Wheat in its un-milled form, is a good source of Vitamins B1, B2, B6, niacin, E, as well as Iron and Zinc. Most of these nutrients are concentrated in the outer layers of the wheat grain(in the bran and the germ), and are lost during the milling process in a significant proportion and the level of nutrient loss depends on the extent of flour processing. The level of Vitamins and Minerals lost in this process can be replenished by fortification. Iron, Folic acid and Vitamin B12 when added to wheat flour can be beneficial in fighting anaemia, blood formation and also in the prevention of birth defects such as Neural Tube Defects(NTD)

Rice Fortification

Rice provides more than a fifth of the world’s food calories and is the major staple food for millions of individuals, particularly in Asia. In an average diet, 30% of calories come from rice and more than 70% in some low-income countries, which makes rice a potentially good vehicle for delivering micronutrients to a very large number of people. Rice fortification is a cost effective, culturally appropriate strategy to address micronutrient deficiency in countries with high per capita rice consumption. Rice is a rich source of macro- and micronutrients in its un-milled form. During rice milling, the fat as well as the micronutrient-rich bran layers are removed to produce the commonly consumed starch-rich white rice, removing 75–90% of the B-group vitamins. Fortification of rice makes it more nutritious by adding vitamins and minerals in the post - harvest phase. Rice fortification may be considered as having the highest potential to fill this gap created in its nutritional profile during milling and polishing process.

Oil Fortification

Around the world, deficiency of Vitamin A and Vitamin D are one of the most common forms resulting in weak bones, teeth, muscles, reproductive organs and eye sight. Both are essential form of vitamins which are required for regular functioning of body. Vitamin D is also considered to play an important role in decreasing the risk of many chronic illnesses, including common cancers, autoimmune diseases, infectious diseases, diabetes and cardiovascular disease. More than 57% of children suffer from vitamin A deficiency, which may be symptomatic or present at the sub-clinical level. In addition, a high proportion of pregnant women and their new-borns suffer from Vitamin D deficiency. Since Vitamin A and Vitamin Dare fat-soluble vitamins, fortification of edible oils and fats with Vitamin A and Vitamin D is a good strategy to address micronutrient malnutrition and fortified oil is known to provide 25%-30% of the recommended dietary allowances for vitamin A & vitamin D without altering the taste , flavour or colour of the oil.

Milk Fortification

Milk is known as complete nutritious food, rich in high-quality protein and providing all ten essential amino acids as well as immunoglobulins and one of the most commonly consumed commodities globally. India as the largest producer with production of 187.7 million tonnes in 2018-19 and consumer of milk with per capita availability of 394 gms/day. The micronutrient profile of whole milk shows that it is an excellent source of calcium and Vitamin B2, a good source of vitamin A, and a fair source of vitamin D. However, industrial processes destroy some nutrients, especially Vitamins A and Vitamin D are lost when milk fat is removed during processing and can be replenished by micro-nutrient fortification and its widespread consumption makes it an excellent vehicle for fortificants.
